Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using chicken breasts, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using sirloin steaks or NY strip steak, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

Prepare Ingredients and Start Mashed Potatoes
Coarsely chop spinach.
Peel and cut potatoes into large evenly-sized chunks.Finely chop mushrooms.Mince garlic.Bring a medium pot with potato chunks covered by water to a boil.Once boiling, cook until fork-tender, 14-18 minutes.Remove from burner. Reserve 1/4 cup potato cooking water. Drain potatoes in a colander and set aside. Reserve pot; no need to wipe clean.While potatoes boil, continue recipe. -
Cook the Pork Chops
Pat pork chops dry and season both sides with 1/4 tsp. salt and 1/4 tsp. pepper.
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.Add pork chops to hot pan and cook until golden-brown and pork chops reach a minimum internal temperature of 145 degrees, 3-5 minutes per side.Pork thickness can vary; if you receive a thinner chop, we recommend checking for doneness sooner. Remove from burner and transfer to a plate. Rest, 3 minutes.Reserve pan; no need to wipe clean. -
Make the Mushroom Duxelle
Return pan used to cook pork chops to medium heat and add 2 tsp. olive oil.
Add mushrooms and half the garlic (reserve remaining for mashed potatoes) to hot pan. Stir occasionally until browned, 3-5 minutes.Add Parmesan, half the softened cream cheese (reserve remaining for mashed potatoes), 1 Tbsp. water, and a pinch of salt and pepper. Stir occasionally until cream cheese is melted and combined, 1-2 minutes.Remove from burner. -
Finish the Mashed Potatoes
Return pot used to cook potatoes to medium-low heat.
Add 1 tsp. olive oil and remaining garlic to hot pot. Stir constantly until fragrant, 1-2 minutes.Add spinach and a pinch of salt. Stir occasionally until wilted, 1-2 minutes.Remove from burner. Add potatoes, butter, remaining softened cream cheese, 1/4 tsp. salt, and a pinch of pepper. Gently mash until combined and smooth. If too thick, add potato cooking water, 1 tsp. at a time, until desired consistency is reached. -
