Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Prepare the Ingredients
Drain beans in a wire-mesh strainer. Transfer to a mixing bowl and lightly mash. Set aside.
Peel, trim, and cut carrot into 1/4" slices on an angle. If carrot is larger than 1" in diameter, halve before slicing.Halve and peel onion. Cut halves into 1/4" dice. -
2 Form the Meatballs
In another mixing bowl, combine ground turkey, 1/2 tsp. salt, a pinch of pepper, and 3/4 the cheese (reserve remaining for garnish). Form into 16 equally-sized meatballs.

3 Cook the Meatballs
Place a large pot over medium heat and add 1 Tbsp. olive oil. Add meatballs to hot pot. Cover and roll occasionally until browned all over, 5-6 minutes.
Work in batches, if necessary; meatballs will finish cooking in a later step.Transfer meatballs to a plate. Keep pot over medium heat. -
4 Cook the Vegetables
Add 2 tsp. olive oil, onions, carrots, and garlic salt to hot pot. Stir occasionally until lightly browned and juices have released, 8-10 minutes.

5 Finish Soup and Finish Dish
Add beans, marinara, and chicken base to hot pot. Gently mash beans. Stir in kale and 4 cups water. Bring to a simmer.
Once simmering, add meatballs. Stir until combined, broth has slightly thickened, vegetables are tender, and meatballs reach a minimum internal temperature of 165 degrees, 8-10 minutes. Remove from burner. Stir in butter until thoroughly combined.Plate dish as pictured on front of card, garnishing with remaining cheese. Bon appétit!
