Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

1 Prepare the Green Onions
Trim and thinly slice green onions on an angle, keeping white and green portions separate.

2 Make the Quesadilla Croutons
Place tortillas on a clean work surface. Divide cheese evenly between two tortillas and top with remaining tortillas.
Place a large pot over medium heat and add 1 tsp. olive oil. Place quesadillas in hot pot. There should be no overlap; cook in batches, if necessary, adding 1 tsp. olive oil for each batch. Cook until golden-brown, 2-4 minutes per side.Remove from burner. Transfer to a plate and set aside. Reserve pot; no need to wipe clean. -
3 Start the Chili
Return pot used to cook quesadillas to medium-high heat.
Add ground beef, white portions of green onions, and 1/2 tsp. salt to hot pot. Break up meat until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes. -
4 Finish the Chili
Add black and pinto beans and their liquid to hot pot and lightly mash. Add chipotle pepper paste (to taste), mirepoix base, chile and cumin rub, 2 cups water, and 1/2 tsp. salt. Bring to a simmer.
Once simmering, stir occasionally until chili thickens, 6-8 minutes.Remove from burner.While chili cooks, continue recipe. -
5 Finish the Dish
Cut quesadillas into 1" squares.
Plate dish as pictured on front of card, topping chili with sour cream, quesadilla croutons, and green portions of green onions. Bon appétit!
