1 Prepare the Ingredients
Coarsely chop slaw mix.
Drain pineapples and coarsely chop.Coarsely chop peanuts.Cut off root end of romaine. Separate leaves of lettuce for cups.To re-crisp lettuce cups, soak in icy, cold water, 5 minutes. Thoroughly dry. You should have about 5-6 cups total. Layer two lettuce cups for extra crunch and structural support. Lettuce cups are a delicious but messy meal. For this recipe, they can easily be converted to a salad. Simply chop romaine and top with filling after completing steps. -
2 Cook the Pork
Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil.
Add ground pork and Asian garlic, ginger & chile seasoning (use less if spice-averse) to hot pan. Break up meat until no pink remains and pork reaches a minimum internal temperature of 160 degrees, 5-7 minutes. -
3 Add the Pineapples
Add pineapples to hot pan with pork.
Stir occasionally until beginning to brown, 2 minutes. -
4 Add the Slaw and Sauce
Add slaw and teriyaki glaze to hot pan and stir to throughly combine.
Cover and cook until cabbage is tender, 2-3 minutes.Remove from burner. -
5 Finish the Dish
Plate dish as pictured on front of card, filling lettuce cups with pork mixture and garnishing with peanuts. Bon appétit!
