Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |

  • Chicken 165° F |

  • Ground Turkey 165° F |

  1. 1

    Prepare the Ingredients

Halve tortillas, then cut into small, equally-sized triangles.

Drain black beans in a colander/strainer.

Trim and thinly slice green onions on an angle, keeping white and green portions separate.

  2. 2

    Cook the Ground Beef

    Place a large oven-safe non-stick pan over medium-high heat.

Add ground beef, white portions of green onions, and a pinch of salt to hot, dry pan.

Break up beef until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes.

Drain excess grease from pan, if desired.

  3. 3

    Add the Sauce

Add flour to hot pan and stir until no dry flour remains.

Stir in 2 Tbsp. water, enchilada sauce, corn, taco seasoning, 1/2 tsp. salt, and a pinch of pepper. Bring to a simmer.

Once simmering, stir often until combined and slightly thickened, 1-2 minutes.

If too thick, add additional water, 1 Tbsp. at a time, until desired consistency is reached.

    Remove from burner.

  4. 4

    Bake the Skillet

Stir tortilla triangles and black beans into beef mixture. Spread into an even layer and top evenly with cheese.

Transfer pan to hot oven and bake until heated through and cheese has melted, 7-9 minutes.

Carefully remove from oven. Pan handle will be hot! Use an oven mitt.

  5. 5

    Finish the Dish

Plate dish as pictured on front of card, garnishing with green portions of green onions and sour cream. Bon appétit!
