Before You Cook

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Start the Tomatoes

    Halve tomatoes. If you receive one whole tomato instead, not to worry; simply core tomato, cut into 1/2" dice, and proceed with recipe instructions.

    Place tomatoes in prepared casserole dish and top with half the garlic and parsley seasoning (reserve remaining for couscous) and a pinch of salt and pepper.

    Roast in hot oven until starting to soften, 10-15 minutes.

    While tomatoes roast, continue recipe.

    Prepare Ingredients and Make Filling

    Stem and mince oregano.

    Coarsely chop spinach.

    Mince garlic.

    Add spinach to a microwave-safe bowl. Cover with a damp paper towel. Microwave covered until wilted, 30-60 seconds.

    Carefully remove from microwave. Stir in cheese and garlic. Set aside.

    Prepare the Chicken

    Pat chicken dry. On a separate cutting board, carefully cut 4-5 slits across top of chicken, making sure not to cut all the way through.

    Carefully and evenly stuff filling in between slits.

    After 10-15 minutes, carefully remove tomatoes from oven and stir. Nestle stuffed chicken in between tomatoes. Top chicken with oregano and a pinch of pepper. Casserole dish will be hot! Use caution.

    Finish the Tomatoes and Chicken

    Roast in hot oven until chicken reaches a minimum internal temperature of 165 degrees, 18-22 minutes.

    Carefully remove from oven. Transfer chicken to a plate. Stir tomatoes to combine.

    While tomatoes and chicken roast, continue recipe.

    Cook Couscous and Finish Dish

    Bring couscous, 1 cup water, remaining garlic and parsley seasoning, and a pinch of salt to a simmer in a small pot.

    Once simmering, cover and cook until water is absorbed and couscous is tender, 8-10 minutes.

    Remove from burner. Rest covered, 5 minutes.

    Add tomatoes to couscous and stir to combine.

    Plate dish as pictured on front of card. Bon appétit!
