If using ground turkey, bake uncovered in hot oven until meatballs reach minimum internal temperature, 30-35 minutes.

1 Start the Sweet Potatoes and Meatballs
Place sweet potatoes, 4 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper in one provided tray. Massage oil and seasonings into sweet potatoes. Spread into an even layer.
In a mixing bowl, combine panko and 2 Tbsp. water. Let sit, 1 minute.After 1 minute, add ground beef, half the fiesta seasoning (reserve remaining for vegetables), half the softened cream cheese (reserve remaining for sauce), and 1/4 tsp. salt. Stir to combine. Form meat mixture into 16 equally-sized meatballs and place in second provided tray.Bake both trays uncovered in hot oven, 15 minutes.Carefully remove both trays from oven and drain any excess liquid. Trays will be hot! Use caution.Meatballs will finish cooking in a later step. -
2 Add Corn and Bake Meal
Stir corn and remaining fiesta seasoning into sweet potatoes until combined. Tray will be hot! Use a utensil.
Bake both trays uncovered in hot oven until sweet potatoes are tender and meatballs reach a minimum internal temperature of 160 degrees, 15-20 minutes.Carefully remove trays from oven.While meal bakes, continue recipe. -
3 Make Sauce and Finish Meal
Place pesto (to taste), remaining softened cream cheese, a pinch of salt, and tomatoes in a microwave-safe bowl.
Microwave uncovered until cream cheese melts, 30-60 seconds.Carefully remove from microwave and stir to combine.Microwave again uncovered until heated through, 1-2 minutes.Carefully remove from microwave.To serve, top meatballs with sauce (to taste). Garnish vegetables with sour cream and grated cheese. Bon appétit!
