Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Start the Meatloaves
In a mixing bowl, combine panko and 2 Tbsp. water. Let sit, 1 minute.
After 1 minute, add ground beef, mayonnaise, 1/4 tsp. salt, and a pinch of pepper.Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height. Place meatloaves in one side of provided tray.Bake uncovered in hot oven, 15 minutes.Meatloaves will finish cooking in a later step.Carefully remove from oven and drain any excess liquid. -
Add the Corn
Add corn, a pinch of salt, and 1 tsp. olive oil to empty side of tray. Stir to combine.

Bake Meal and Heat Mashed Potatoes
Bake uncovered in hot oven until corn is heated through and meatloaves reach a minimum internal temperature of 160 degrees, 10-15 minutes.
While meal bakes, in a microwave-safe bowl, add mashed potatoes, cheese, 1/3 the butter (reserve remaining for corn), and a pinch of salt. Vigorously stir to combine. Evenly top mashed potatoes with bacon.Microwave uncovered until heated through, 2-3 minutes.Carefully remove from microwave and vigorously stir to combine. Bowl will be hot! Use a utensil.Carefully remove tray from oven and stir remaining butter into corn until combined.To serve, top meatloaf with BBQ sauce and cherry preserves. Bon appétit!
