Start the Green Beans
Trim green beans, if necessary.
Place green beans in one provided tray and toss with 1 tsp. olive oil, garlic salt, and a pinch of pepper. Spread into a single layer.Bake uncovered in hot oven until green beans begin to soften, 8-10 minutes.While green beans bake, continue recipe. -
Prepare Pork and Add Potatoes
Pat pork medallions dry and season all over with 1/4 tsp. salt and a pinch of pepper.
If you receive a whole tenderloin, pat dry, then slice into medallions, 3/4"-thick.Place pork in second provided tray and spray with cooking spray.After 8-10 minutes, carefully remove green beans from oven.Push green beans to one side of tray. Add mashed potatoes, a pinch of salt, and 1 Tbsp. water to now-empty side of tray. Stir vigorously to combine.If you receive mashed sweet potatoes instead, no worries! Follow same instructions. -
Bake Meal and Make Sauce
Bake both trays uncovered in hot oven until green beans are tender, potatoes are heated through, and pork reaches a minimum internal temperature of 145 degrees, 14-16 minutes.
Pork medallion thickness can vary; if you receive a thinner medallion, we recommend checking for doneness sooner.While meal bakes, in a mixing bowl, combine cherry jam, mustard, and honey. Set aside.Carefully remove both trays from oven. Stir potatoes vigorously to combine. Rest, 3 minutes.To serve, top green beans with cheese and garnish pork with sauce. Bon appétit!
