Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Start the Meatloaves
In a mixing bowl, combine ground beef, panko, taco seasoning, and half the salsa (use less if spice-averse; reserve remaining for rice).
Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height. Place loaves in provided tray. Cover with foil.Bake covered in hot oven, 10 minutes.While meatloaves bake, continue recipe. -
Add the Rice and Cheese
Drain beans in a strainer.
Carefully massage rice in bag to break up any clumps. Remove rice from packaging.In another mixing bowl, combine 2 tsp. olive oil, corn, beans, rice, garlic salt, and remaining salsa (to taste). Stir to break up rice as much as possible.After 10 minutes, carefully remove tray from oven and drain excess liquid.Push meatloaves to one side of tray and top evenly with cheese. Tray will be hot! Use a utensil.Transfer rice mixture to now-empty side of tray. Cover rice side of tray with foil. -
Bake the Meal
Bake half-covered (rice covered, meatloaves uncovered) in hot oven until rice is heated through and meatloaves reach a minimum internal temperature of 160 degrees, 12-15 minutes.
Carefully remove tray from oven. Rest, 2 minutes.Fluff rice with a fork.To serve, top meatloaf with chipotle crema. Bon appétit!
