Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Prepare Ingredients and Start Filling
Remove stem, seeds, and ribs, and cut bell pepper into 1/4" dice.
Drain and rinse beans in a wire-mesh strainer.Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.Add bell peppers to hot pan and stir occasionally until tender, 3-4 minutes. -
Finish the Filling
Add ground beef to hot pan with bell peppers. Break up meat until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes.
Carefully drain excess grease from pan. Add tomato puree, 1/4 cup water, 1/4 tsp. salt, taco seasoning, and beans. Stir occasionally until combined and water has evaporated, 1-2 minutes.Remove from burner. -
Assemble the Flautas
Place tortillas on a clean work surface. Divide filling equally among tortillas, placing in center, then top with cheese.
Tuck one tortilla end under filling and roll tightly, placing seam-side down. Repeat with remaining tortillas. -
Broil Flautas and Finish Dish
Transfer flautas to prepared baking sheet. Evenly top with 2 tsp. olive oil and carefully massage until coated. Top with ranch seasoning.
Broil under hot broiler until browned and crispy, 1-3 minutes.Don't text and broil! Keep an eye on oven as tortillas may burn easily under broiler.Carefully remove from broiler. Rest, 2 minutes.Plate dish as pictured on front of card, topping flautas with sour cream and serving salsa (to taste) on the side for dipping. Bon appétit!
