Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil. If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes. If using steak strips, pat dry, coarsely chop, then separate pieces. Stir occasionally until steak reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes. Add protein to meal as desired.

1 Prepare the Ingredients
Place flatbreads on prepared baking sheet.
Halve and peel onion. Cut halves into 1/4" slices. -
2 Cook the Vegetables
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil. Add onions to hot pan and stir occasionally until browned, 10-12 minutes.
If pan becomes dry, add water, 1 Tbsp. at a time, as needed.Add mushrooms and garlic salt and stir occasionally until mushrooms are tender, 3-4 minutes.Remove from burner. Transfer vegetables to a plate and set aside. Wipe pan clean and reserve. -
3 Make Sauce and Bake Flatbreads
Return pan used to cook vegetables to medium heat. Add 1/4 cup water, cream cheese, goat cheese, and a pinch of salt to hot pan. Stir often until cheeses melt and sauce is combined and smooth, 1-2 minutes.
Remove from burner. Top flatbreads with sauce, vegetables, and mozzarella.Broil under hot broiler until cheese melts and browns, 5-6 minutes.Don't text and broil! Keep an eye on oven as flatbreads may burn easily under broiler.While flatbreads bake, continue recipe. -
4 Dress Arugula and Finish Dish
In a mixing bowl, combine arugula, 1 tsp. olive oil, and a pinch of pepper.
