Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |

  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |

    Prepare the Ingredients

    Quarter mushrooms.

    Halve lime. Cut one half into wedges and juice the other half.

    Drain beans.

    Cook the Filling

    Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add mushrooms, pepper and onion mix, and fiesta seasoning to hot pan. Stir occasionally until browned, 4-6 minutes.

    Add beans and mirepoix base. Stir occasionally and lightly mash beans until combined and heated through, 3-5 minutes.

    If pan becomes dry, add water, 1 Tbsp. at a time, until desired consistency is reached.

    Remove from burner.

    While filling cooks, continue recipe.

    Prepare Guacamole and Heat Tortillas

    In a mixing bowl, combine guacamole and 2 tsp. lime juice. Set aside.

    Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.

    If tortillas come folded, keep folded.

    Carefully remove from microwave.

    Finish the Dish

    Plate dish as pictured on front of card, filling tortillas evenly with filling, guacamole, cheese, and crispy jalapeños (to taste). Squeeze lime wedges over to taste. Bon appétit!
