1 Start the Vegetables
Turn oven on to 450 degrees. Let preheat, at least 10 minutes. Wash hands thoroughly with soap and warm water before cooking, and after handling raw meat. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry.
Drain potatoes.Place potatoes and cabbage in provided tray. Top with 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Gently stir to combine.Bake uncovered in hot oven, 20 minutes. While vegetables bake, continue recipe. -
2 Add the Salmon
Trim and thinly slice green onions on an angle, keeping white and green portions separate.
Pat salmon dry. Season flesh side with garlic pepper.Place a medium non-stick pan over medium-high heat and add 2 tsp. olive oil. Add salmon, skin-side up, to hot pan. Sear on one side until golden-brown, 2-4 minutes.Remove from burner. After 20 minutes, carefully remove tray from oven. Gently stir in bacon, vinegar, sugar, 1/4 tsp. salt, and white portions of green onions. Push to one side of tray. Tray will be hot! Use a utensil.Transfer salmon, seared-side up, to now-empty side of tray. Top evenly with half the mustard (reserve remaining for garnish). -
3 Bake the Meal
Bake again uncovered in hot oven until salmon is firm and reaches a minimum internal temperature of 145 degrees, 6-8 minutes.
Carefully remove from oven.To serve, top salmon with remaining mustard (to taste) and garnish vegetables with green portions of green onions. Bon appétit!
