Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon, pat dry. Follow same instructions.

1 Roast the Fries
Cut potatoes into 1/4" fries and pat dry.
Place fries and 1 tsp. olive oil on prepared baking sheet. Massage oil into fries and spread into a single layer.Roast in hot oven until lightly browned, 25-30 minutes, tossing fries halfway through.Carefully remove from oven. Stir half the truffle salt (reserve remaining for aioli) into fries until combined. Sheet and fries will be hot! Use a utensil.While fries roast, continue recipe. -
2 Prepare the Ingredients
Trim green beans, if necessary. Cut into 1" pieces.
Pat steaks dry and season both sides with steak seasoning. -
3 Cook the Steaks
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.
Add steaks to hot pan and cook until steaks reach desired doneness, or 4-6 minutes per side for medium/medium-well.Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.Remove from burner. Transfer steaks to a plate and cover with foil. Rest, 3 minutes.Wipe pan clean and reserve.While steaks cook, continue recipe. -
4 Cook the Green Beans
Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil.
Add green beans to hot pan and cook, 1 minute.After 1 minute, add 1/4 cup water and 1/4 tsp. salt. Cover and cook until tender, 6-8 minutes.If green beans need more time, add 2 Tbsp. water, cover, and stir occasionally, 1-3 minutes.Uncover and stir in butter until combined, 1-2 minutes.Remove from burner. -
5 Make Sauce and Aioli and Finish Dish
Return pan used to cook steaks to medium heat.
Add cream base, mustard (to taste), and 1/4 tsp. pepper to hot, dry pan. Stir to combine and bring to a simmer.Once simmering, remove from burner.While sauce cooks, in a mixing bowl, combine mayonnaise and remaining truffle salt. Set aside.Plate dish as pictured on front of card, topping steak with sauce from pan. Garnish green beans with crispy onions. Serve aioli on the side for dipping fries. Bon appétit!
