Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground pork, follow same instructions as ground beef in Steps 2 and 3 baking until loaves reach minimum internal temperature, 28-32 minutes.

Start the Green Beans
Turn oven on to 400 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Place green beans, 2 tsp. olive oil, and a pinch of salt and pepper in provided tray.Cover with foil.Bake covered in hot oven, 15 minutes. -
Add the Cauliflower and Meatloaves
Carefully remove tray from oven. Drain any excess water, if desired. Push green beans to one corner of tray. Tray will be hot! Use a utensil.
Add mashed cauliflower, buttermilk-dill seasoning, and a pinch of salt to tray. Stir vigorously to combine. Push mashed cauliflower into corner next to green beans. Top with butter. Butter will melt as meal bakes.In a mixing bowl, combine panko and 2 Tbsp. water. Rest, 1 minute.After 1 minute, add ground beef, ricotta, chile and cumin rub, and a pinch of salt to bowl with panko.Form into two equally-sized, oval-shaped loaves. Place loaves in now-empty half of tray.Top loaves with half the BBQ sauce (reserve remaining for garnish). -
Bake the Meal
Bake uncovered in hot oven until green beans are tender and loaves reach a minimum internal temperature of 160 degrees, 25-27 minutes.
Carefully remove tray from oven.Stir mashed cauliflower to combine.Rest, 3 minutes.To serve, top meatloaf with remaining BBQ sauce (using clean utensil) and slice, if desired. Bon appétit!
