Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Prepare the Ingredients

    Zest and halve lime. Cut one half into wedges and juice the other half.

    Mince cilantro (no need to stem).

    Pat chicken dry and season both sides with half the Cajun seasoning (use less if spice-averse; reserve remaining for sauce and corn).

    Make the Sauces

    In a mixing bowl, combine BBQ sauce, sweet chili sauce, and Worcestershire sauce. Set aside.

    In another mixing bowl, combine mayonnaise, half the cilantro (reserve remaining for garnish), 1 Tbsp. lime juice, 1/4 the remaining Cajun seasoning (to taste; reserve remaining for corn), and half the cheese (reserve remaining for garnish). Set aside.

    Cook the Chicken

    Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.

    Add chicken to hot pan and cook until golden-brown and chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes per side.

    While chicken cooks, continue recipe.

    Heat the Corn

    Place a small non-stick pan over medium heat and add 1 tsp. olive oil.

    Add corn, remaining Cajun seasoning (to taste), 1 tsp. lime zest, and a pinch of salt to hot pan. Stir until combined and heated through, 2-3 minutes.

    Remove from burner.

    Add BBQ Sauce and Finish Dish

    Add BBQ sauce mixture to chicken and flip to coat both sides.

    Remove from burner.

    Plate dish as pictured on front of card, topping corn with mayonnaise sauce mixture (to taste) and garnishing with remaining cheese and remaining cilantro. Squeeze lime wedges over to taste. Bon appétit!
