Cooking Guidelines

Prepare Ingredients and Form Meatballs
Remove stem, seeds, and ribs, and cut bell pepper into 1/4" dice.
Coarsely chop spinach.In a mixing bowl, combine ground beef, ricotta, panko, chimichurri seasoning, 1/2 tsp. salt, and 1/4 tsp. pepper. Form mixture into 16 evenly-sized meatballs. -
Cook the Meatballs
Place a large non-stick pan over medium heat and add 1 tsp. olive oil.
Add meatballs to hot pan, cover, and roll occasionally until browned all over and meatballs reach a minimum internal temperature of 160 degrees, 8-10 minutes.Remove from burner.While meatballs cook, continue recipe. -
Cook the Peppers
Place another large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add bell peppers and a pinch of salt and pepper to hot pan. Stir occasionally until peppers are tender, 5-7 minutes. -
Add Rice and Finish Dish
Carefully massage rice in bag to break up any clumps.
Add rice, feta, butter, spinach, and 1/2 tsp. salt to hot pan with bell peppers. Stir often until rice is heated through, 1-2 minutes.Remove from burner.Plate dish as pictured on front of card, topping rice with meatballs. Garnish meatballs with tzatziki. Bon appétit!
