Cooking Guidelines

If using 20 oz. ground turkey, follow same instructions as 10 oz. ground turkey, forming 16 meatballs, and working in batches, if necessary.

If using ground beef, follow same instructions as ground turkey in Steps 1 and 2, rolling occasionally until beef reaches minimum internal temperature, 8-10 minutes.

If using ground pork, follow same instructions as ground turkey in Steps 1 and 2, rolling occasionally until pork reaches minimum internal temperature, 8-10 minutes.

Form the Meatballs
In a mixing bowl, combine half the panko (remaining is yours to use as you please!), turkey, cilantro lime pepper salt, and a pinch of salt. Form into eight evenly-sized meatballs.

Cook the Meatballs
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.
Add meatballs to hot pan. Cover and roll occasionally until browned all over and turkey reaches a minimum internal temperature of 165 degrees, 8-10 minutes.Add 2 Tbsp. water and enchilada sauce. Gently stir until meatballs are coated. Remove from burner.While meatballs cook, continue recipe. -
Cook the Broccoli
Break broccoli into bite-sized pieces using hands.
Place a large non-stick pan over medium heat and add 1 tsp. olive oil.Add broccoli and 1/4 cup water to hot pan. Cover and cook until water is almost completely evaporated, 4-6 minutes.Uncover and stir occasionally until tender, 2-3 minutes.Add taco seasoning and a pinch of salt. Stir to combine. Remove from burner.While broccoli cooks, continue recipe. -
Finish the Dish
Stem cilantro and tear leaves.
Gently crush tortilla strips.Plate dish as pictured on front of card, garnishing meatballs with cilantro and topping broccoli with cheese and crushed tortilla strips. Bon appétit!
