Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground beef, roast until meatballs reach minimum internal temperature, 17-20 minutes.

Prepare the Ingredients
Quarter potatoes. If larger than a ping-pong ball, cut into six to eight wedges.
Peel, trim, and halve carrot lengthwise. Cut into 1/2" half-moons.In a mixing bowl, combine lemon juice and honey. Set aside. -
Form the Meatballs
In another mixing bowl, combine panko, ground turkey, 1/4 tsp. salt, and chimichurri seasoning. Form mixture into 16 evenly-sized meatballs and place on one prepared baking sheet.

Assemble the Carrots
Place carrots on one half of second prepared baking sheet and top with 1 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Massage oil and seasonings into carrots. Spread into an even layer on their side.

Assemble the Potatoes
Place potatoes on empty side of second baking sheet and top with 2 tsp. olive oil, garlic salt, and a pinch of pepper. Massage oil and seasonings into potatoes. Spread into an even layer on their side.

Roast Vegetables and Meatballs and Finish Dish
Roast both sheets in hot oven until vegetables are tender and meatballs reach a minimum internal temperature of 165 degrees, 22-25 minutes.
Carefully remove both sheets from oven. Drain any excess liquid from meatballs.Stir lemon-honey mixture into carrots until coated. Sheet will be hot! Use a utensil.Stir softened butter into potatoes until melted and combined. Sheet will be hot! Use a utensil.Plate dish as pictured on front of card, topping meatballs with tzatziki. Bon appétit!
