Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Prepare the Ingredients
Pat chicken dry. Season both sides with half the taco seasoning (reserve remaining for vegetables). Place chicken in one provided tray and top evenly with 1 tsp. olive oil.
Place pepper and onion mix in second provided tray. Top with remaining taco seasoning and 1 tsp. olive oil. Massage oil and seasoning into vegetables. Cover with foil. -
Start Meal and Add Cheese
Bake both trays (chicken uncovered, vegetables covered) in hot oven, 15 minutes.
Carefully remove chicken from oven. Drain any excess liquid from tray. Top chicken evenly with cheese. Tray will be hot! Use a utensil -
Finish Meal and Heat Rice
Return chicken to hot oven and bake until cheese melts, vegetables are tender, and chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes.
While meal bakes, carefully massage rice in bag to break up any clumps. Remove rice from packaging. Combine rice and amarillo seasoning in a microwave-safe bowl. Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Rest, 2 minutes. Add butter and fluff with a fork to combine.Carefully remove trays from oven.To serve, top chicken with salsa (to taste), sour cream, and guacamole. Bon appétit!
