Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Start the Vegetables
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Break broccoli into smaller pieces using hands.In provided tray, combine peppers, a pinch of salt, 1 tsp. olive oil, and broccoli. Spread into an even layer.Bake uncovered in hot oven until tender, 15-20 minutes.While vegetables bake, continue recipe. -
2 Add the Pork
Pat pork medallions dry and season both sides with a pinch of salt and Asian garlic, ginger & chile seasoning (use less if spice-averse). If you receive a whole pork tenderloin, pat dry and, on a separate cutting board, slice into medallions, 3/4"-thick.
Place a medium non-stick pan over medium-high heat and add 2 tsp. olive oil. Add pork to hot pan and cook undisturbed until browned on one side, 2-3 minutes.Remove from burner.Carefully remove tray from oven. Push vegetables to one side of tray. Transfer pork, seared-side up, to now-empty side of tray. Top pork and vegetables with sweet and sour sauce, soy sauce, and red pepper flakes (use less if spice-averse). -
3 Bake the Meal
Bake uncovered in hot oven until pork reaches a minimum internal temperature of 145 degrees, 6-8 minutes.
Pork medallion thickness can vary; if you receive a thinner medallion, we recommend checking for doneness sooner.Carefully remove from oven. Rest, 3 minutes.While meal bakes, in a large microwave-safe bowl, combine rice, 11/4 cups water, and 1/4 tsp. salt. Leave at least 3” of room on top to prevent overboil. Microwave uncovered, 4 minutes.Carefully remove rice from microwave and stir. Microwave again uncovered, 2 minutes.To serve, top rice with vegetables and pork. Top pork with sauce from tray and garnish with sesame seeds. Bon appétit!
