Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

  • If using diced chicken thighs, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes. Don't worry about trimming. Excess fat will render while cooking and add flavor.

  • If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

  • If using steak strips, pat dry, coarsely chop, then separate pieces. Stir occasionally until steak reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes.

    Cook the Rice

    Bring a small pot with rice, 1/4 tsp. salt, and 11/4 cups water to a boil.

    Once boiling, reduce to a simmer, cover, and cook until rice is tender, 15-18 minutes.

    Remove from burner. Stir in half the cilantro (prepared in a later step; reserve remaining for crema) and set aside covered.

    While rice cooks, continue recipe.

    Prepare the Ingredients

    Stem and coarsely chop cilantro.

    Remove stem, seeds, and ribs, and cut bell pepper into 1/2" dice.

    Mince garlic.

    Cook the Bell Peppers

    Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.

    Add bell peppers, 1/4 tsp. salt, and 1/4 tsp. pepper to hot pan. Stir occasionally until tender, 6-8 minutes.

    Remove from burner. Transfer to a plate and set aside. Return pan to medium-high heat; no need to wipe clean.

    Cook the Pork

    Add 1 tsp. olive oil, ground pork, chipotle seasoning (use less if spice-averse), and a pinch of salt to hot pan. Break up meat until no pink remains and pork reaches a minimum internal temperature of 160 degrees, 5-7 minutes.

    Add garlic and stir occasionally until fragrant, 30-60 seconds.

    Add pesto (to taste), honey, 1/4 tsp. salt, and 1/4 tsp. pepper. Stir often until combined, 2-3 minutes.

    Add cooked bell peppers and stir to combine.

    Remove from burner.

    Make Crema and Finish Dish

    In a mixing bowl, combine sour cream, remaining cilantro, and 1 tsp. water until smooth.

    Plate dish as pictured on front of card, topping rice with pork mixture and garnishing with a dollop of crema. Bon appétit!
