Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

If using diced chicken thighs, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes. Don't worry about trimming. Excess fat will render while cooking and add flavor.

If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

If using steak strips, pat dry, coarsely chop, then separate pieces. Stir occasionally until steak reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes.

Cook the Rice
Bring a small pot with rice, 1/4 tsp. salt, and 11/4 cups water to a boil.
Once boiling, reduce to a simmer, cover, and cook until rice is tender, 15-18 minutes.Remove from burner. Stir in half the cilantro (prepared in a later step; reserve remaining for crema) and set aside covered.While rice cooks, continue recipe. -
Prepare the Ingredients
Stem and coarsely chop cilantro.
Remove stem, seeds, and ribs, and cut bell pepper into 1/2" dice.Mince garlic. -
Cook the Bell Peppers
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add bell peppers, 1/4 tsp. salt, and 1/4 tsp. pepper to hot pan. Stir occasionally until tender, 6-8 minutes.Remove from burner. Transfer to a plate and set aside. Return pan to medium-high heat; no need to wipe clean. -
Cook the Pork
Add 1 tsp. olive oil, ground pork, chipotle seasoning (use less if spice-averse), and a pinch of salt to hot pan. Break up meat until no pink remains and pork reaches a minimum internal temperature of 160 degrees, 5-7 minutes.
Add garlic and stir occasionally until fragrant, 30-60 seconds.Add pesto (to taste), honey, 1/4 tsp. salt, and 1/4 tsp. pepper. Stir often until combined, 2-3 minutes.Add cooked bell peppers and stir to combine.Remove from burner. -
Make Crema and Finish Dish
In a mixing bowl, combine sour cream, remaining cilantro, and 1 tsp. water until smooth.
Plate dish as pictured on front of card, topping rice with pork mixture and garnishing with a dollop of crema. Bon appétit!
