If using ground beef, bake uncovered in hot oven until meatballs reach minimum internal temperature, 25-30 minutes.

1 Start the Meatballs and Carrots
Place carrots and 1 tsp. water in a microwave-safe bowl.
Microwave uncovered until slightly tender, 4-5 minutes.While carrots microwave, finely crush crackers.In a mixing bowl, combine ground pork, crushed crackers, ricotta, half the black garlic seasoning (reserve remaining for sauce), 1/4 tsp. salt, and 1/4 tsp. pepper. Form mixture into 6 equally-sized meatballs. Transfer meatballs to one side of provided tray.Carefully remove carrots from microwave. Place carrots and 1 tsp. olive oil in empty side of tray.Bake uncovered in hot oven, 10 minutes.Meatballs will finish cooking in a later step.While meatballs and carrots bake, continue recipe. -
2 Add the Rice
Carefully massage rice in bag to break up any clumps and remove from packaging.
After 10 minutes, carefully remove tray from oven.Stir rice, peas, and 1/4 tsp. salt into carrots until combined. Tray will be hot! Use a utensil.Evenly top rice mixture with butter and cover with foil. -
3 Finish Meal and Heat Sauce
Bake half-covered (meatballs uncovered, rice covered) in hot oven until rice is heated through and meatballs reach a minimum internal temperature of 160 degrees, 15-20 minutes.
While meal bakes, in another microwave-safe bowl, combine marinara and remaining black garlic seasoning.Microwave until heated through, 15-30 seconds.Carefully remove from microwave. Set aside.Carefully remove tray from oven. Stir rice to combine. Tray will be hot! Use a utensil.To serve, top meatballs with sauce and shredded cheese. Bon appétit!
