Roast the Cottage Fries
Cut potatoes into 1/4" rounds.
Place potatoes on prepared baking sheet and top with 2 tsp. olive oil, 1/4 tsp. salt, and half the garlic pepper (reserve remaining for broccoli).Massage oil and seasonings into potatoes. Top evenly with half the cheese (reserve remaining for garnish) and spread into a single layer (some overlap is OK).Roast in hot oven until tender and browned, 25-30 minutes.While potatoes roast, continue recipe. -
Prepare the Ingredients
Cut broccoli into bite-sized pieces. Trim discolored ends, if necessary.
Mince garlic. -
Cook the Steaks
Pat steaks dry and season both sides with garlic salt and 1/4 tsp. pepper.
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.Add steaks to hot pan and cook until steaks reach desired doneness, or 3-4 minutes per side for medium/medium-well.Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.Remove from burner. Rest, 3 minutes.While steaks cook, continue recipe. -
Cook the Broccoli
Place another medium non-stick pan over medium heat and add 2 tsp. olive oil.
Add broccoli and 1/4 cup water to hot pan. Cover and cook until water is almost completely evaporated, 4-6 minutes.Uncover and add garlic, a pinch of salt, and remaining garlic pepper. Stir occasionally until tender, 2-3 minutes.Remove from burner.While broccoli cooks, continue recipe. -
Make Compound Butter and Finish Dish
In a mixing bowl, combine softened butter, pesto, and a pinch of salt and pepper.
Plate dish as pictured on front of card, topping steak with compound butter and garnishing broccoli with remaining cheese. Bon appétit!
