Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using ground beef, add meatballs to hot pan and cook until beef reaches minimum internal temperature, 10-12 minutes.

1 Form the Meatballs
Coarsely crush crackers in shipping bag.
In a mixing bowl, combine ground turkey, crushed crackers, 1/4 tsp. salt, and barbeque seasoning (use less if spice-averse). Form mixture into 10 equally-sized meatballs. -
2 Cook the Meatballs
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.
Add meatballs to hot pan. Cover, and roll occasionally until browned all over and turkey reaches a minimum internal temperature of 165 degrees, 11-13 minutes.Remove from burner.While meatballs cook, continue recipe. -
3 Cook the Cauliflower
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add cauliflower, 1/4 tsp. salt, and 1/4 cup water to hot pan. Bring to a simmer.
Once simmering, cover and cook until water is mostly evaporated and cauliflower is tender, 3-5 minutes.Uncover and stir often until lightly browned, 2-4 minutes.Remove from burner.Stir softened butter into cauliflower, top with cheese, and let melt.While cauliflower cooks, continue recipe. -
4 Make Spicy Dijonnaise and Finish Dish
In another mixing bowl, combine hot sauce (to taste), mustard, mayonnaise, sour cream, and a pinch of salt and pepper. Set aside.
