Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using pork chops, follow same instructions as chicken in Steps 2 and 3, baking uncovered in hot oven until pork reaches minimum internal temperature, 23-27 minutes. Rest, 3 minutes.

Start the Butternut Squash
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Spray provided tray with cooking spray.
Combine butternut squash, 1 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper in provided tray. Spread into a single layer.Bake uncovered in hot oven, 20 minutes. -
Add the Chicken
Carefully remove tray from oven. Push butternut squash to one side. Tray will be hot! Use a utensil.
Pat chicken dry and season both sides with seasoning blend and 1/4 tsp. salt. Place chicken in empty half of tray.In a mixing bowl, combine chipotle pesto (to taste) and BBQ sauce. Top chicken with sauce. -
Bake the Meal
Bake uncovered in hot oven until butternut squash is tender and chicken reaches a minimum internal temperature of 165 degrees, 20-25 minutes.
While meal bakes, combine sour cream, a pinch of salt, and 1 tsp. water in another mixing bowl. Tear cilantro, reserving leaves whole.Carefully remove from oven. Top butternut squash with crema, cilantro leaves, and crispy jalapeños (to taste). Bon appétit!
