If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Cook the Chicken
Pat chicken dry and season both sides with barbeque seasoning (use less if spice-averse).
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil. Add chicken to hot pan and cook until browned and chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes per side.Remove from burner. Transfer chicken to a plate and tent with foil. Reserve pan; no need to wipe clean.While chicken cooks, continue recipe. -
2 Prepare the Ingredients
Trim and thinly slice green onions.
Line a plate with a paper towel. Spread bacon on towel-lined plate and microwave until crisp, 1-2 minutes.Carefully remove from microwave. -
3 Make the Loaded Mashed Potatoes
Place another medium non-stick pan over medium heat and add 1 tsp. olive oil.
Add mashed potatoes and 1/4 tsp. salt to hot pan. Stir vigorously until combined and heated through, 2-3 minutes.Remove from burner. Stir in half the cheese (reserve remaining for garnish), crisped bacon, and sour cream. -
4 Make Sauce and Finish Dish
Return pan used to cook chicken to low heat. Add Buffalo sauce (to taste), brown sugar, and 2 tsp. water to hot pan. Bring to a simmer.
Once simmering, remove from burner. Stir in butter until melted and combined, 30-60 seconds.If sauce is too thick, add additional water, 1 tsp. at a time, until desired consistency is reached.Plate dish as pictured on front of card, topping chicken with sauce (to taste) and garnishing potatoes with remaining cheese and green onions.
