Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using ground turkey, break up until turkey reaches minimum internal temperature, 6-8 minutes.

    Prepare the Ingredients

    Tear tortillas into quarters.

    Drain and rinse beans.

    Start the Skillet

    Place a large non-stick pan over medium-high heat.

    Add ground beef, diced peppers, and a pinch of salt to hot, dry pan.

    Break up beef until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes.

    Drain any excess grease from pan. Pan will be hot! Use a utensil.

    Add the Sauce

    Add flour to hot pan and stir until no dry flour remains.

    Add 2 Tbsp. water, enchilada sauce, corn, taco seasoning, 1/2 tsp. salt, and a pinch of pepper. Stir to combine and bring to a simmer.

    Once simmering, stir often until slightly thickened, 1-2 minutes.

    If too thick, add additional water, 1 Tbsp. at a time, until desired consistency is reached.

    Reduce heat to low.

    Finish Skillet and Finish Dish

    Stir tortillas and beans into hot pan.

    Spread into an even layer and evenly top with cheese.

    Cover and cook until cheese is melted, 2-3 minutes.

    Remove from burner.

    Plate dish as pictured on front of card, topping skillet with sour cream. Bon appétit!
