Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Start the Cauliflower
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Wash hands thoroughly with soap and warm water before cooking, and after handling raw meat and seafood. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry.
Add cauliflower, 1/4 tsp. salt, and a pinch of pepper to provided tray. Spray with cooking spray and stir until cauliflower is coated.Bake uncovered in hot oven, 10 minutes.While cauliflower bakes, continue recipe. -
Add the Meatballs
Finely crush crackers.
Combine ground pork, half the sour cream (remaining is yours to use as you please!), pot roast seasoning, 1/4 tsp. salt, and crushed crackers in a mixing bowl. Form mixture into 8 equally-sized meatballs.After 10 minutes, carefully remove tray from oven and push cauliflower to one side. Tray will be hot! Use a utensil.Place meatballs in now-empty side of tray. -
Bake the Meal
Bake uncovered in hot oven until cauliflower is tender and meatballs reach a minimum internal temperature of 160 degrees, 20-25 minutes.
While meal bakes, coarsely crush pecans in shipping bag.Carefully remove tray from oven.To serve, stir butter into cauliflower until melted and combined. Garnish meatballs with pecans and dressing. Bon appétit!
