If using antibiotic free chicken breasts, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using salmon, pat dry. Add salmon, skin-side up first, and cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until salmon reaches minimum internal temperature, 4-6 minutes per side.

If using sirloin steaks, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

Prepare the Ingredients
Peel and cut potatoes into large evenly-sized chunks.
Trim ends off green beans, if necessary.Pat steaks dry and season both sides with a pinch of salt and pepper. -
Make the Mashed Potatoes
Bring a medium pot with potato chunks covered by water to a boil.
Once boiling, cook until fork-tender, 14-18 minutes.Remove from burner. Drain potatoes in a colander/strainer and return to pot. Add half the cream base (reserve remaining for sauce), 1/4 tsp. salt, and a pinch of pepper. Mash until combined and smooth. If too thick, add water, 1 Tbsp. at a time, until desired consistency is reached.While potatoes cook, continue recipe. -
Start the Green Beans and Steaks
Place green beans on prepared baking sheet and toss with 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Spread into a single layer.
Roast in hot oven until mostly tender, 12-15 minutes.While green beans roast, place a medium non-stick pan over medium heat and add 2 tsp. olive oil.Add steaks to hot pan and sear until browned, 1-2 minutes per side.Remove from burner.Steaks will finish cooking in a later step. -
Finish the Green Beans and Steaks
Carefully remove baking sheet from oven and push green beans to one side of sheet. Baking sheet will be hot! Use a utensil.
Transfer steaks to now-empty side of sheet. Reserve pan; no need to wipe clean.Roast in hot oven until green beans are tender and steaks reach desired doneness, 3-6 minutes.Steak thickness can vary; depending on preference, we recommend checking internal temperature for accuracy.Carefully remove from oven. Rest, 3 minutes.While green beans and steaks roast, continue recipe. -
Make Sauce and Finish Dish
Return pan used to sear steaks to medium heat. Add 1 Tbsp. water, remaining cream base, any accumulated juices from resting steaks, and half the smoked maple seasoning (to taste; add remaining, if desired). Bring to a simmer.
Once simmering, stir constantly until smooth and slightly thickened, 1-2 minutes.If sauce is too thick, add additional water, 1 tsp. at a time, until desired consistency is reached.Remove from burner.Plate dish as pictured on front of card, topping steak with sauce. Bon appétit!
