Make the Mashed Potatoes
Peel and cut potatoes into large evenly-sized chunks.
Bring a large pot with potato chunks covered by water to a boil.Once boiling, cook until fork-tender, 15-20 minutes.Remove from burner. Drain potatoes in a colander/strainer and return to pot. Add sour cream, half the cream base (reserve remaining for sauce), 1/2 tsp. salt, and 1/4 tsp. pepper.Mash until combined and smooth. If too thick, add water, 1 Tbsp. at a time, until desired consistency is reached. While potatoes cook, continue recipe. -
Prepare the Ingredients
Trim ends off green beans, if necessary.
Trim and thinly slice green onions, keeping white and green portions separate.Pat steaks dry and season both sides with half the smoked maple seasoning (reserve remaining for sauce). -
Roast the Green Beans
Place green beans on prepared baking sheet and toss with 2 tsp. olive oil, garlic salt, and 1/4 tsp. pepper. Spread into a single layer.
Roast in hot oven until tender, 15-20 minutes. While green beans roast, continue recipe. -
Cook the Steaks
Place a large non-stick pan over medium heat and add 2 tsp. olive oil.
Add steaks to hot pan and cook until steaks reach desired doneness, or 3-5 minutes per side for medium/medium-well.Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.Remove from burner. Transfer steaks to a plate. Rest, 3 minutes.Reserve pan; no need to wipe clean. While steaks rest, continue recipe. -
Make Sauce and Finish Dish
Return pan used to cook steaks to medium heat. Add white portions of green onions, remaining cream base, and any accumulated juices from resting steaks to hot pan. Bring to a simmer.
Once simmering, stir constantly until smooth and slightly thickened, 1-2 minutes.Remove from burner. Taste, and season with remaining smoked maple seasoning, if desired.Plate dish as pictured on front of card, topping steak with sauce and garnishing dish with green portions of green onions. Bon appétit!
