If using diced chicken thighs, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes. Don't worry about trimming. Excess fat will render while cooking and add flavor.

If using shrimp, pat dry. Cook until pink and shrimp reach minimum internal temperature, 2-3 minutes per side.

If using steak strips, pat dry, coarsely chop, then separate pieces. Stir occasionally until steak reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes.

1 Prepare the Ingredients
Trim and thinly slice green onions on an angle, keeping white and green portions separate.
Pat sliced pork dry. Coarsely chop, then separate pieces. In a mixing bowl, combine pork, cornstarch, and a pinch of salt until pork is coated. -
2 Cook the Vegetables
Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil.
Add cabbage and white portions of green onions to hot pan. Stir occasionally until tender, 1-2 minutes.Transfer to a plate. Keep pan over medium-high heat. -
3 Cook Pork and Add Noodles
Add 2 tsp. olive oil and sliced pork to hot pan. Stir occasionally until no pink remains and pork reaches a minimum internal temperature of 145 degrees, 5-7 minutes.
Stir in soy sauce, vegetables, noodles, stir fry sauce, hot sauce (to taste), and a pinch of salt and pepper. Sir often until combined, 1-2 minutes.Remove from burner. -
4 Finish the Dish
