Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

Prepare the Rice and Beans
Drain and rinse beans.
Carefully massage rice in bag to break up any clumps. Remove rice from packaging.In one provided tray, combine rice, beans, corn, salsa (to taste), half the fiesta seasoning (reserve remaining for shrimp), and 1/4 tsp. salt. Top evenly with cheese. Cover tray with foil. -
Prepare the Shrimp
Pat shrimp dry.
In second provided tray, combine shrimp, 2 tsp. olive oil, enchilada sauce, remaining fiesta seasoning, and butter. Butter will melt as meal heats.You may receive plain butter and a seasoning. If so, to make Roasted Garlic & Herb Butter, combine softened butter and seasoning (to taste). -
Bake the Meal
Bake both trays (shrimp uncovered, rice covered) in hot oven until rice is heated through and shrimp reach a minimum internal temperature of 145 degrees, 18-20 minutes.
Carefully remove from oven.To serve, top rice with shrimp and garnish with tortilla strips. Bon appétit!
