Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Start the Couscous Mixture
Place carrots and 1 tsp. water in a microwave-safe bowl. Cover with a damp paper towel.
Microwave covered until slightly tender, 3-5 minutes.Carefully remove from microwave.Place microwaved carrots, couscous, 2 cups water, mirepoix base, piri piri seasoning (use less if spice-averse), 1/4 tsp. salt, and a pinch of pepper in one provided tray.Bake uncovered in hot oven, 10 minutes.While couscous mixture bakes, continue recipe. -
2 Make Tzatziki Crema and Prepare Shrimp
In a mixing bowl, combine creme fraiche and tzatziki. Set aside.
Pat shrimp dry.In second provided tray, combine shrimp, 2 tsp. olive oil, and chimichurri seasoning. Spread into an even layer. -
3 Finish the Meal
After 10 minutes, carefully remove tray from oven and stir couscous. Tray will be hot! Use a utensil.
Bake both trays uncovered in hot oven until couscous is tender and shrimp reach a minimum internal temperature of 145 degrees, 20-25 minutes.Carefully remove both trays from oven and stir softened butter and 1/4 tsp. salt into couscous mixture.To serve, top couscous mixture with shrimp. Garnish with tzatziki crema and almonds. Bon appétit!
