If using ground turkey, roast until meatballs reach minimum internal temperature, 17-20 minutes.

Prepare the Ingredients
Break broccoli into bite-sized pieces. Trim discolored ends, if necessary.
Stem poblano pepper, seed, and cut into 1/2" dice. Poblano peppers can vary in spice level; most are mild, but a few can be quite hot. Wash hands and cutting board after prepping. -
Add the Vegetables and Meatballs
Place poblanos (use less if spice-averse) and broccoli on one half of prepared baking sheet. Top with 2 tsp. olive oil, 1/4 tsp. salt, a pinch of pepper, and fiesta seasoning. Massage oil and seasonings into vegetables. Spread into an even layer.
Combine panko and 2 Tbsp. water in a mixing bowl. Rest, 1 minute.After 1 minute, add ground beef, 1/4 tsp. salt, half the pesto (use less if spice-averse), and half the cream cheese (reserve remaining of each for sauce) and thoroughly stir to combine.Form mixture into 8 equally-sized meatballs and place on empty side of baking sheet. -
Roast the Vegetables and Meatballs
Roast in hot oven until vegetables are tender and meatballs reach a minimum internal temperature of 160 degrees, 15-18 minutes.
Carefully remove from oven.Stir butter into vegetables until melted and combined. Baking sheet will be hot! Use a utensil.While vegetables and meatballs roast, continue recipe. -
Make Sauce and Finish Dish
In a microwave-safe bowl, combine remaining cream cheese, remaining pesto (to taste), 2 Tbsp. water, and a pinch of pepper. Cover with a damp paper towel.
Microwave covered until cream cheese melts, 30-60 seconds.Carefully remove from microwave and stir to combine.To serve, top meatballs with sauce (to taste). Bon appétit!
