If using antibiotic free chicken breasts, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon or sirloin steaks, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first, and cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until salmon reaches minimum internal temperature, 4-6 minutes per side.

Prepare the Broccoli
Cut broccoli into bite-sized pieces.
Place broccoli, 2 tsp. olive oil, and umami seasoning on one half of prepared baking sheet. Massage oil and seasoning into broccoli.Spread into an even layer on their side. -
Add the Chicken
Pat chicken dry and season both sides with a pinch of salt and pepper.
In a mixing bowl, combine sweet chili sauce, sambal (to taste), and minced garlic and chili pepper (to taste). Set aside.Place chicken on empty side of baking sheet and evenly top with sweet chili garlic mixture (use less if spice-averse). -
Roast the Broccoli and Chicken
Roast in hot oven until broccoli is tender and chicken reaches a minimum internal temperature of 165 degrees, 14-18 minutes.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove sheet from oven. Stir soy sauce into broccoli until combined. Sheet will be hot! Use a utensil.While broccoli and chicken roast, continue recipe. -
Heat Rice and Finish Dish
Carefully massage rice in bag to break up any clumps. Remove rice from packaging. Place rice in a microwave-safe bowl.
Microwave uncovered until heated through, 2-3 minutes.Carefully remove from microwave. Rest, 2 minutes.Fluff rice with a fork. Bon appétit!
