Cooking Guidelines

1 Prepare Ingredients and Make Bruschetta
Core tomato and cut into 1/4" dice.
Cut potatoes into 1" dice.In a mixing bowl, combine tomatoes and pesto. Set aside. -
2 Prepare the Potatoes and Chicken
Place potatoes on prepared baking sheet. Top with 1 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Massage oil and seasonings into potatoes. Push potatoes to one side of baking sheet.
Pat chicken dry and season both sides with garlic and parsley seasoning, 1/4 tsp. salt, and a pinch of pepper. Add chicken to empty side of sheet. -
3 Roast the Potatoes and Chicken
Roast in hot oven until potatoes are tender and chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.

4 Add Cheese and Finish Dish
Carefully remove from oven and top chicken with mozzarella.
Roast again in hot oven until cheese is melted, 2-3 minutes.Carefully remove from oven. Add butter and Parmesan to potatoes and stir until combined. Sheet will be hot! Use a utensil.To serve, top chicken with bruschetta. Bon appétit!
