Cooking Guidelines

Prepare the Ingredients
Stem and tear cilantro leaves.
Trim green beans, if necessary.Stem jalapeño and slice into thin rounds. Wash hands and cutting board after working with jalapeño.Add jalapeños (to taste) to a mixing bowl and cover with cold water. Let sit, 1-2 minutes.Drain and pat dry. -
Prepare the Green Beans and Chicken
Place green beans on prepared baking sheet and top with 1 tsp. olive oil and half the garlic salt (reserve remaining for chicken). Massage oil and seasoning into green beans. Push green beans to one side of sheet.
Pat chicken dry and season both sides with chile and cumin rub, remaining garlic salt, and a pinch of pepper. Place chicken on empty side of sheet. Top chicken evenly with cheese, then 2-3 jalapeño slices (use less if spice-averse).Cover green beans side of sheet with foil. -
Roast the Green Beans and Chicken
Roast half-covered (green beans covered, chicken uncovered) in hot oven until green beans are tender and chicken reaches a minimum internal temperature of 165 degrees, 20-25 minutes.

Add Pesto and Finish Dish
Carefully remove from oven. Stir pesto (to taste) into green beans. Sheet will be hot! Use a utensil.
To serve, top chicken with cilantro. Bon appétit!
