If using antibiotic free chicken breasts, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first, and cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until salmon reaches minimum internal temperature, 4-6 minutes per side.

If using trout, pat dry. Add trout, skin-side up first, and cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until fish reaches a minimum internal temperature, 2-3 minutes per side.

Prepare the Ingredients
Zest and halve lemon. Cut one half into wedges and juice the other half.
Stem and mince dill. -
Assemble the Vegetables
Place diced peppers, sweet potatoes, 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper on one half of prepared baking sheet. Massage oil and seasonings into vegetables. Spread into an even layer on their side.

Add the Chicken
Pat chicken dry and season both sides with chimichurri seasoning, potato spice seasoning, and a pinch of pepper.
Place chicken on empty side of baking sheet. -
Roast Vegetables and Chicken and Finish Dish
Roast in hot oven until vegetables are tender and chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove from oven.Stir dill, 1 tsp. lemon zest, and 1 tsp. lemon juice into vegetables until combined.
