Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground turkey, roast until meatballs reach minimum internal temperature, 17-20 minutes.

If using Impossible burger, roast until meatballs reach minimum internal temperature, 23-25 minutes.

Prepare the Ingredients
Trim zucchini ends, quarter, and cut into 1" dice. Zucchini quantity may vary, but total weight will remain the same. Don't worry; recipe instructions are not impacted.
Remove stem, seeds, and ribs, and cut bell pepper into 1" dice. -
Form the Meatballs
In a mixing bowl, combine ground pork, panko, ricotta, chimichurri seasoning, half the garlic salt (reserve remaining for vegetables), and 1/4 tsp. pepper.
Form mixture into 8 equally-sized meatballs. -
Assemble the Vegetables and Meatballs
Place zucchini, bell peppers, 1 tsp. olive oil, remaining garlic salt, and a pinch of pepper on prepared baking sheet. Massage oil and seasonings into vegetables. Push to one side of sheet.
Place meatballs on now-empty side of sheet and evenly top with 1 tsp. olive oil. -
Roast Vegetables and Meatballs and Finish Dish
Roast in hot oven until vegetables are tender and meatballs reach a minimum internal temperature of 160 degrees, 15-20 minutes.
Carefully remove from oven. Stir softened butter into vegetables until melted and combined. Sheet will be hot! Use a utensil.To serve, top meatballs with tzatziki and garnish vegetables with feta. Bon appétit!
