If using antibiotic free chicken or chicken breasts, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

Prepare the Ingredients
Trim green beans, if necessary.
Stem cilantro and coarsely chop leaves.Zest and halve lime. Cut halves into wedges. -
Start the Green Beans
Place green beans on prepared baking sheet and toss with 1 tsp. olive oil, half the garlic salt (reserve remaining for trout), and a pinch of pepper. Spread into a single layer and cover with foil.
Roast covered in hot oven, 10 minutes.While green beans roast, continue recipe. -
Add the Trout
Pat trout dry. Season flesh side with honey, chile and cumin rub, and remaining garlic salt.
After 10 minutes, carefully remove baking sheet from oven.Uncover and push green beans to one side of sheet. Sheet will be hot! Use a utensil.Add trout, skin-side down, to now-empty side of sheet. -
Roast Meal, Make Butter, and Finish Dish
Roast in hot oven until green beans are tender and trout reaches a minimum internal temperature of 145 degrees, 7-10 minutes.
While green beans and trout roast, in a mixing bowl, combine softened butter and 1/2 tsp. lime zest. Set aside.Carefully remove sheet from oven.To serve, top trout with lime butter. Garnish green beans with cilantro and cheese. Squeeze lime wedges over dish to taste. Bon appétit!
