If using ground beef, roast until meatballs reach minimum internal temperature, 17-20 minutes.

Prepare the Ingredients
Finely dice red peppers.
Break broccoli into bite-sized pieces using hands. Trim discolored ends, if necessary.In a mixing bowl, combine ground turkey, panko, mayonnaise, and half the onion salt (reserve remaining for broccoli). Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height. -
Add the Broccoli and Meatloaves
Place broccoli on one side of prepared baking sheet and top evenly with 1 tsp. olive oil, remaining onion salt, and a pinch of pepper. Massage oil and seasonings into broccoli and spread into an even layer on their side. Cover broccoli side with foil.
Add meatloaves to empty side of sheet. -
Roast the Broccoli and Meatloaves
Roast (broccoli covered, loaves uncovered) in hot oven until broccoli is tender and meatloaves reach a minimum internal temperature of 165 degrees, 20-25 minutes.
Carefully remove from oven.While broccoli and meatloaves roast, continue recipe. -
Make Sauce and Finish Dish
In a microwave-safe bowl, combine cream cheese, red peppers, 1/4 cup water, and a pinch of salt. Cover with a damp paper towel.
Microwave covered until hot, 1-2 minutes.Carefully remove from microwave. Stir in cheddar until combined and smooth.To serve, top meatloaf with sauce and garnish broccoli with Parmesan. Bon appétit!
