Cooking Guidelines

Prepare the Ingredients
Coarsely crush crackers.
Peel, trim, and cut carrots into 1/4" rounds.Mince chives.In a mixing bowl, combine garlic aioli and buttermilk-dill seasoning. Set aside. -
Assemble the Carrots
Place carrots on prepared baking sheet and top with 2 tsp. olive oil and a pinch of salt. Massage oil and seasoning into carrots. Push to one side of sheet and spread into an even layer.

Add the Chicken
Pat chicken dry and season both sides with a pinch of salt and pepper. Place on empty side of sheet.
Evenly top chicken with half the garlic aioli mixture (reserve remaining for garnish), then crushed crackers, pressing gently to adhere. Spray chicken with cooking spray. -
Roast Carrots and Chicken and Finish Dish
Roast in hot oven until carrots are tender and chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.
Carefully remove from oven. Stir butter, honey, chives, and a pinch of salt into carrots until combined. Sheet will be hot! Use a utensil.To serve, top chicken with remaining garlic aioli mixture (using a clean utensil). Bon appétit!
