Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Prepare the Trays
Spray provided trays with cooking spray.
Drain and rinse beans.Carefully massage rice in bag to break up any clumps. Remove rice from packaging.In one prepared tray, combine rice, beans, taco seasoning, 1/4 tsp. salt, and 1 tsp. olive oil. Cover tray with foil.In a mixing bowl, combine ground turkey, panko, fiesta seasoning, 1/4 tsp. salt, and half the sour cream (reserve remaining for garnish). Form mixture into four equally-sized, oval-shaped loaves, about 3" in length and 2" by height. Place in second prepared tray. -
2 Start the Rice and Meatloaves
Bake both trays in hot oven (rice covered, meatloaves uncovered), 20 minutes.
Carefully remove from oven. Meatloaves will finish cooking in a later step.Uncover rice and stir in softened cream cheese until combined. Tray will be hot! Use a utensil.Evenly top meatloaves with salsa (use less if spice-averse), then shredded cheese. Tray will be hot! Use caution. -
3 Finish the Rice and Meatloaves
Bake both trays uncovered in hot oven until shredded cheese has melted and meatloaves reach a minimum internal temperature of 165 degrees, 5-8 minutes.
Carefully remove both trays from oven and stir rice to combine.To serve, top meatloaf with remaining sour cream. Bon appétit!
