Make the Mashed Potatoes
Bring a medium pot with potatoes and 1/2 tsp. salt covered by water to a boil.
Once boiling, cook until fork-tender, 14-18 minutes.Remove from burner. Reserve 1/4 cup potato cooking water. Drain potatoes in a colander and return to pot.Add sour cream, 1/2 tsp. salt, a pinch of pepper, and 2 Tbsp. reserved potato cooking water. Mash until combined and smooth. If too thick, add additional reserved potato cooking water, 1 tsp. at a time, until desired consistency is reached. While potatoes cook, continue recipe. -
Cook the Ground Beef
Place a large oven-safe non-stick pan over medium-high heat.
Add ground beef to hot, dry pan. Break up meat until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes.Add flour and stir until no dry flour remains. -
