1 Bake the Puff Pastry
Spray both provided trays with cooking spray.
Remove puff pastry from refrigerator. Remove any paper between puff pastry squares, if necessary. If paper is sticking, place puff pastry in freezer until firm, 5 minutes.Evenly divide puff pastry between both trays and top each tray with 1 tsp. olive oil.Bake uncovered in hot oven until golden-brown, 12-15 minutes.While puff pastry bakes, continue recipe. -
2 Start the Pot Pie Filling
Place carrots and 2 Tbsp. water in a microwave-safe bowl.
Microwave uncovered until fork-tender, 3-4 minutes.While carrots microwave, pat chicken dry.Carefully remove from microwave.After 12-15 minutes, carefully remove tray from oven and transfer puff pastry to a plate. Set aside.Evenly divide chicken, microwaved carrots, rotisserie chicken seasoning, and garlic salt evenly between both now-empty trays. Stir to combine and spread into an even layer. Trays will be hot! Use a utensil.Bake uncovered in hot oven, 15 minutes.Carefully remove from oven.Chicken will finish cooking in a later step. -
3 Finish Pot Pie Filling and Finish Meal
Evenly divide flour between both trays and stir until no dry flour remains.
Evenly divide peas, cream base, chicken base, and cheese between both trays. Add 1/4 cup water and a pinch of salt and pepper to each tray. Stir to combine. Trays will be hot! Use a utensil.Bake both trays uncovered in hot oven until filling has slightly thickened and chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.Carefully remove both trays from oven and stir to combine. Halve puff pastry.To serve, top pot pie with puff pastry. Bon appétit!
