Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    Microwave Instructions

    Thoroughly rinse any fresh produce and pat dry. Combine poblanos, cream cheese, and 1/4 cup water in provided tray. Cover tray with a damp paper towel. Microwave until poblanos are tender, 2-3 minutes. Carefully remove tray from microwave. Drain pulled pork and separate pieces. Stir seasoning blend, corn, and pork into tray. Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds. On a clean work surface, distribute pork mixture evenly in the middle of each tortilla and roll tightly. Place seam-side down in tray. Cover again with a damp paper towel. Microwave until pork is heated through, 3-4 minutes. Remove from microwave. Place enchilada sauce in a microwave-safe bowl and microwave until heated through, 30-60 seconds. To serve, top with sauce and cheese. Bon appétit!

    Oven Instructions

    Turn oven on to 375 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Combine poblano, corn, cream cheese, and 1/4 cup water in provided tray. Place tray on a baking sheet and bake uncovered in hot oven until poblano is tender, 15-18 minutes. Wrap tortillas in foil. Place directly on oven rack and heat until warm and pliable, 5-10 minutes. Carefully remove tray from oven. Drain pulled pork and separate pieces. Stir pork and seasoning blend into tray. Carefully remove tortillas from oven. On a clean work surface, distribute pork mixture evenly in the middle of each tortilla and roll tightly. Place seam side down in provided tray. Bake again uncovered in hot oven until pork is warmed through, 10-12 minutes. While enchiladas bake, place enchilada sauce in a microwave-safe bowl and microwave until heated through, 30-60 seconds. To serve, top with sauce and cheese. Bon appétit!
