If using antibiotic free chicken breasts, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using top round steak, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until steak reaches desired doneness, or 3-5 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first, and cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until salmon reaches minimum internal temperature, 3-4 minutes per side.

Heat the Potatoes
Quarter potatoes.
Place potatoes on a microwave-safe plate.Microwave uncovered until tender, 5-6 minutes.While potatoes microwave, continue recipe. -
Prepare Ingredients and Make Crema
Drain beans.
Halve lime. Cut one half into wedges and juice the other half.Stem and mince cilantro.In a mixing bowl, combine sour cream and 1 Tbsp. lime juice. Set aside. -
Prepare the Chicken
Pat chicken dry.
In another mixing bowl, combine chicken, 2 tsp. olive oil, cilantro, adobo seasoning, 1/4 tsp. salt, and a pinch of pepper. Set aside. -
Arrange the Hash and Chicken
Place microwaved potatoes, corn, and beans on prepared baking sheet and toss with 2 tsp. olive oil, 1/2 tsp. salt, and a pinch of pepper. Spread into a single layer on one side of sheet and top evenly with cheese. Potatoes will be hot! Use caution.
Place chicken on empty side of sheet. -
Roast Meal and Finish Dish
Roast in hot oven until hash has browned and chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Plate dish as pictured on front of card, topping chicken with lime crema. Squeeze lime wedges over to taste. Bon appétit!
