1 Prepare the Ingredients
Halve potatoes. Quarter if larger than a ping-pong ball.
Remove stem, seeds, and ribs, and cut bell pepper into 1/2" slices.
Cut broccoli into bite-sized pieces.
Place vegetables on prepared baking sheet and toss with 2 tsp. olive oil, half the garlic salt (reserve remaining for meatloaves), and a pinch of salt. Push to one side of sheet and spread into an even layer.
-
2 Form the Meatloaves
In a mixing bowl, combine panko and 2 Tbsp. water. Rest, 1 minute.
After 1 minute, add ground beef, half the garlic and parsley seasoning (reserve remaining for sauce), and remaining garlic salt.
Form mixture into four equally-sized, oval-shaped loaves, about 3" in length and 2" by height. Place on empty side of baking sheet.
-
3 Roast the Vegetables and Meatloaves
Roast in hot oven until vegetables are tender and meatloaves reach a minimum internal temperature of 160 degrees, 20-25 minutes.
Carefully remove from oven.
Transfer meatloaves to a plate. Top vegetables with pesto and gently stir to combine. Sheet will be hot! Use caution.
While vegetables and meatloaves roast, continue recipe.
-
4 Make the Sauce
In a microwave-safe bowl, combine cream cheese, half the Parmesan (reserve remaining for garnish), remaining garlic and parsley seasoning, 2 Tbsp. water, and a pinch of salt.
Cover with a damp paper towel. Microwave covered until melted, 1-2 minutes.
Carefully remove from microwave. Stir until smooth and combined.
-
5 Finish the Dish
Plate dish as pictured on front of card, topping meatloaf with sauce and garnishing vegetables with remaining Parmesan. Bon appétit!
